This peanut butter pie has been a family favorite for years. It is so simple to whip together for a quick and tasty dessert, using just a few ingredients. To make it even simplier, I used a pre-made Oreo crust, but you can of course make a homemade cookie crust. The filling is light and fluffy with a subtle peanut butter flavor.
Fluffy Peanut Butter Pie
Yields: 1 pie
1 (8ounce) package of cream cheese, softened
1 (14 ounce) can of sweetened condensed milk
3/4 cup peanut butter
3 tablespoons lemon juice
1 teaspoon vanilla extract
1 cup whipped topping
1 Oreo cookie crust
Chocolate bar or chocolate syrup for garnish
In a large bowl, beat the cream cheese with an electric mixer until fluffy. Beat in condesnsed milk and peanut butter until smooth. Stir in lemon juice and vanilla, then fold in whipped topping with a rubber spatula.
Pour the peanut butter filling into the crust. To make chocolate shavings, run a vegetable peeler down the side of a choclate bar, and garish as desired. You can also use chocoalte syrup on top of the pie instead of chocolate shavings.
Refrigerate for 4 hours until set. Keep leftovers in the refrigerator.
