My grandfather was a phenomenal baker, and these ginger chews were one of his signature cookies. You could always find a container of these cookies on his kitchen table. They are the perfect blend of sweet and spicy, and the molasses in them makes them soft and chewy. There will always be room in my cookie jar for this classic molasses cookie!
Ginger Chews
Yields: About 3 dozen cookies
Ingredients:
3/4 cup shortening
1 cup sugar
1 egg
1/4 cup molasses
2 cups flour
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon salt
2 teaspoons baking soda
Directions:
Preheat the oven to 350 degrees F.
Cream together the shortening, sugar, egg and molasses. In a seperate bowl, whisk together the remaning dry ingredients. Slowly add the dry ingredients to the wet ingrdients, and mix well. Roll the dough into small balls, and roll in granulated sugar.
Bake on a ungreased cookie sheet for 10-12 minutes.
