My work schedule this week is crazy, so this week’s dinner menu consists meals that are quick and easy to make. This steak marinade is a great example. Mix up the marinade the night before, marinate your steak all night, then throw it on the grill. Pair it with a salad, and in less than 10 minutes, dinner is served!
This is now one of my favorite marinades. I love soy sauce, and the addition of garlic, onions and lime juice really helps balance the flavors. The mariade helps give the steak some zing, without overpowering the flavor of the meat. It would be great on chicken as well!
Soy Garlic Flank Steak
Yields: 2-3 servings
Ingredients:
1/4 cup olive oil
2 tbsp + tsp low sodium soy sauce
2 green onions, sliced
2 cloves of garlic, minced
Juice of 1 lime
1/4 tsp red pepper flakes
1/4 tsp ground cumin
1 1/2 tbsp brown sugar
1 lb flank steak
Directions:
Combine the olive oil, soy sauce, green onion, minced garlic, lime juice,
red pepper flakes, cumin, and brown sugar together in a large ziplock bag. Add the steak and place into the refrigerator to marinate for 24 hours.
Grill on medium heat for 3-4 minutes per side until cooked. Let the meat rest for at least 5 minutes before slicing.
