Do you know someone who seems to eat ketchup with everything? That would be my husband – except his condiment of choice is barbecue sauce. The man uses barbecue sauce on anything and everything, from burgers to mashed potatoes to french fries. Needless to say, we go through a lot of BBQ sauce.
I prefer a sweeter barbecue sauce, while Brad prefers something with a little more spice. This sauce was the perfect marriage between sweet and spicy. You can adjust it to your liking by adjusting the spices. Like it sweet? Add more honey and skip the cayenne pepper. Do you like it so hot that your mouth burns? Add more chile pepper and cayenne pepper, and you can even toss in some red pepper flakes for an added zing. It comes out so much better than store-bought barbecue sauce, and its perfect for barbecue chicken or pork.
Sweet and Zesty BBQ Sauce
Yields: About 1.5 cups
2 tbsp butter
1/4 cup minced red onion
4 cloves garlic, minced
1 cup ketchup
2 tbsp molasses
2 tbsp worcestershire sauce
1/4 tsp liquid smoke
2 tsp chipotle chile pepper, ground
1/4 tsp cayenne pepper
1-2 tbsp honey (taste for sweetness)
1 tbsp white wine vinegar
Salt and pepper
1/2 cup water, if necessary
In a medium saucepan, melt the butter over medium heat. Add the onion and cook for 5 minutes until softened, then add the garlic and cook for another minute.
Lower the heat to medium-low, and add in the ketchup, molasses, worcestershire, liquid smoke, chipotle chile pepper, cayenne, honey, and vinegar.
Simmer for 15 minutes over medium low heat. Taste your sauce, and add any necessary spices. If you prefer a thinner barbecue sauce, add in 1/2 cup of water until you reach your desired consistency.
