Despite that fact that I have a food blog and obviously love to cook, there are many nights after a long day of work that I just don’t feel like cooking. On those nights, we’ll often fall back on simple spaghetti with marinara sauce. I typically keep some marinara sauce in the freezer for such occasions, but this time I thought I would try a popular tomato sauce recipe that I’ve seen floating around. The reason why it is so popular – it involves only 3 ingredients. Oh, and it tastes wonderful!
This sauce is all about simplicity. All you need is a can of tomatoes, butter and an onion. That’s it!! You don’t even need to chop the onion, if you can believe that. Resist the urge to add any additional spices or garlic, you really don’t need them. I was quite skeptical at first, but the beauty of this sauce is that it tastes that good on its own, without any spices.
Three Ingredient Tomato Sauce
Yields: 4 servings
28 ounces whole peeled tomatoes from a can*
5 tablespoons unsalted butter
1 medium-sized yellow onion, peeled and halved
Salt to taste (optional, I omitted)
*I used a can of tomato purree, as we prefer a smoother texture
Put the tomatoes, onion and butter in a heavy saucepan over medium heat. Bring the sauce to a simmer then lower the heat to keep the sauce at a slow, steady simmer for about 45 minutes. Stir occasionally, crushing the tomatoes against the side of the pot with a wooden spoon.
Remove from heat, discard the onion, add salt to taste if you wish, and keep warm while you prepare your pasta.
Serve with your favorite pasta.
*Freezer Friendly Tip* – Double or triple this recipe, and keep the extras in a freezer bag, frozen flat to save on storage space.
