I love grilled cheese, and I love chicken smothered in Buffalo sauce. The only logical answer? Combine the two into a fantastic buffalo chicken grilled cheese sandwich. You start by shredding chicken, and combine it with carrots, celery, and onion to add a nice crunch to the sandwich. Toss it in hot sauce, ranch dressing and cheddar cheese and grill it like you normally would with grilled cheese. The result is a cheesy sandwich stuffed with buffalo chicken – perfect for a quick weeknight dinner.
Buffalo Chicken Grilled Cheese Sandwich
Yields: 1 sandwich
Ingredients:
1/4 cup cooked shredded chicken, warm
1 tablespoon hot sauce
1 tablespoon ranch dressing
1 tablespoon carrot, grated
1 tablespoon celery, sliced
1 tablespoon green or red onion, sliced or diced
1/4 cup cheddar cheese, room temperature, grated
2 slices sandwich bread
Butter
Directions:
Mix all the ingredients together in a small bowl.
Assemble the sandwich and grill until golden brown and the cheese has melted, about 2-3 minutes per side.
