Peanut Butter Cup Bars

Do you have 10 minutes? Then you have time to make these peanut butter cup bars. No baking required! These are ridiculously delicious, and taste just like those famous buckeyes that make their appearance around Christmas time, excpet they are even easier to make. If you are a fan of all things peanut butter and chocolate, you MUST give these a try.

Peanut Butter Cup Bars
Yields: 16 bars

Ingredients:
1/2 cup butter
1 3/4 cups confectioner’s sugar
1 cup peanut butter
3/4 cup graham cracker crumbs
1/4 cup butter
1/2 cup semi-sweet chocolate chips

Directions:
Line an 8”x8” baking pan with foil and set aside.

Melt 1/2 cup of butter in a saucepan over low heat. Remove from the heat and stir in the confectioner’s sugar until smooth. Add in the peanut butter and graham crackers, stirring until creamy and well incorporated. Spread the mixture evenly into pan, and set aside.

In same pot, melt the remaining butter over low heat. Add the chocolate chips and stir until the chocolate chips are melted and the chocolate is smooth and shiny. Gently spread over the peanut butter mixture, then refrigerate for at least 30 minutes before serving. Cut into bars, and store in the refrigerator.
