Loaded Cheesy Baked Potato Casserole

Serves: 8-12 servings
  • 1 pound thick cut bacon, cooked and chopped
  • 3 pounds red potatoes, washed and diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup sour cream
  • 1 (8 ounce) package cream cheese
  • 2 cups shredded mild cheddar cheese
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 3 scallions, chopped
  1. Preheat the oven 400°F.
  2. In a large bowl, combine the sour cream, cream cheese, 1 cup of the cheddar cheese, salt and pepper until well combined. Add the potatoes, diced onion, garlic and ¾ of the bacon and mix until well combined.
  3. Spread the potatoes into a greased 9x13 pan, then cover with foil. Bake for 60-70 minutes or until the potatoes are fork-tender. Remove from the oven, stir, then sprinkle with the remaining cheese, bacon and scallions. Bake uncovered for an additional 10-15 minutes or until the cheese is melted.
